Toh friends aaj hum isi varieties me se ek jodhpur ki famous Khasta pyaz ki kachori banane jaa rahe hai. Ghar me bana hone ki wajah se ye tasty toh hai hi saath me healthy bhi hai kyonki aap isme apne according flour use kar sakte hai aur apne hi according vegetable oil use kar sakte hai jo bhi aapko suit kare. Toh chaliye start karte hai iske ingredients ke saath-
Ingredients (for dough):-
- 1 and half cup gehu ka aata
- 1 cup maida
- 1/2 cup sooji
- Salt to taste
- Desi ghee for moyan(lagbhag 2 tbsp)
- 1/2 tsp kalongi
- 1/2 tsp ajwain
Ingredients(for stuffing):-
- 2 big size onion
- 2 green chilli
- 1 inch ginger
- 1 tbsp besan(cheak pea flour)
- 1 tsp oil
- 1 pinch hing
- 1/2 tsp jeera
- 1/2 tsp raaie (เคฐाเค)
- 1 tejpatta
- 1 dry red chilli
- Salt to taste
- 1/2 tsp Other basic spices (red chilli powder, garam masala, amchoor)
- Vegetable oil (for fry)
Method:-
Sabse pehle kachori ke liye aata lagate hai. Iske liye aata maida aur sooji me salt, ajwain aur kalongi daal kar mix karenge. Ab hum isme moyan(desi ghee) daal kar haathon se acche se mix karenge aur normal dough bana lenge. Hume aata bahut tight ya bahut soft nai banana hai. 10 min ke liye dhak ke rakh dete hai. (aap chahe toh sirf Maida se bhi ya sirf aata se bhi bana sakte hai)
Ab stuffing ke liye ek pan me oil garam karte hai. Usme 1 pinch hing, jeera, raaie, sabut laal mirch aur tejpatta daalenge. Phir usme baarik cut kiya hua onion, 2 hari mirch baarik kati hui, ginger grate kiya hua daalenge. 2 min bhun le phir usme salt, laal mirch powder, garam masala, amchor powder daal ke acche se mix karenge. Ab hum usme besan daal ke 2 min aur bhoon lenge. Hamara stuffing ready hai isse thanda hone denge.
Ab aata ki lemon size ki loi lekar usse haathon se thoda faila lenge aur usme stuffing bhar kar usse acche se band(seal) kar denge. Ab usse hatheli se press karte hue thoda bel lenge. Dhyan rahe press acche se kare, ab kadai me oil garam kare aur low to medium flame par golden brown hone tak fry kar le.
Aapki tasty chatpati onion kachori ready hai. Garam garam crispy kachori apne pasand ki chatni ya sauce ke saath enjoy kare. Umeed hai aap sab ko receipe pasand aayegi. Thank you๐
Tips:-
- Moyan ke liye desi ghee ka use karne se taste accha aata hai.
- Moyan barabar hai ki nahi ye dekhne ke liye ghee mix karne ke baad aata ko mutthi me lekar band kariye agar ladoo ban raha hai toh moyan thik hai nahi toh thoda ghee aur add kar lijiye.
- Stuffing mustard oil me banane se zyada accha aur spicy banta hai.
- Kachori fry karne ke liye aap apni pasand ka koi bhi vegetable oil use kar sakte hain.๐
