aaj ki meri receipe hai crispy Sooji ki Kachori

Ingredients:-( for dough)
1 cup sooji
2 cup water
1 spoon oil
Salt to taste
1/2 spoon ajwain(optional)
For stuffing:-
Boiled potatoes
Chopped green chilli
Ginger garlic paste
Salt to taste
Other basic spices

Method:-
Sabse pehle 1 pan me 2 cup paani daalkar gas par rakhe phir usme salt oil or ajwain daalkar boil kare jab paani acche se boil ho jaaye then sooji daale or lagatar chalte rahe gas sim karke 2 min pakaye aap dekhenge ki aate k dough jaisa texture to gaya hai then gas off karke plate me nikal le or thoda thanda hone de jab dough thoda garam rahe tab usse thode se oil ki help se acche se masalte hue chikna kar le dough bilkul aata k dough jaisa ready ho jaayega. Ab stuffing banate hai
For stuffing:-
1 pan me oil garam kare usme hing jeera daal k chatkaye then green chilli daale saute for half minute then ginger garlic paste daale again saute for half minute phir boiled nd mashed potato daale phir namak laal mirch powder garam Masala haldi nd amchor powder daal k acche se mix kare.stuffing is ready
Note:- aap stuffing me green peas coriander leaves add kar sakte hai mere paas available nai tha isliye nai kiya
Ab sooji k dough ki 1 loi le usse hateliyon se halka press kar k gol shape de beech me stuffing daale or kachori ki shape dete hue band kar de saari kachori aise hi bana le phir oil me deep fry kar le.ready hai garam garam crispy kachori apne pasand ki chatni ya sauce k saath enjoy kare
Tip: Iss kachori ki ek khaas baat ye hai ki ye oil bahut ki kam absorb karti hai so barish k season me kabhi kabhi chalta hai
